judges

Speed Rack is a cocktail competition with proceeds benefiting the fight against breast cancer. Each competitor makes cocktails for each of the four judges. The fastest to finish may not necessarily win the round. Judges may add points if the cocktail isn’t balanced, in the wrong glass, if it’s too warm, etc. Winners from each city will compete in the finals later this year.

SF Judges: Debbie Zachareas (Ferry Plaza Wine Merchant), Jacob Briars (Barcadi), Charlotte Voisey (William Grant & Sons) and Martin Cate (Smuggler’s Cove).

SD Judges: Erick Castro (Polite Provisions), Neyah White (Suntory Whiskey), Yael Vengroff (Miss Speed Rack 2012) and Simon Ford (The 86 Co.)

Spirits of the Times: Whiskey Tasting at Sassafras Saloon

Standard
Sassafrass Saloon

Sassafrass Saloon

LA Times’ Spirits of the Times sponsored a whiskey tasting at Sassafras Saloon on Repeal Day last month. I’ve enjoyed previous tastings in the past such as Artisinal Spirits and a gin tasting. They are $20 and well worth the price of admission for food, unlimited tastings and a bit of education if you want it. On Repeal Day though, the mood was a bit more celebratory and joyous rather than studious.

Maurice for Hirsch

Maurice for Hirsch Whiskey

Over at the Hirsch Whiskey table, Maurice Chevalier for Anchor Distilling was serving up the Le Colonial Punch (Hirsch Small Batch Reserve Whiskey, Oleo-Sacchrum, Pommeau Normandie, Clos Norman Brut Cider, Black Walnut bitters, freshly grated nutmeg).

This was a tasty punch and I appreciated the trouble Maurice went to make the oleo-sacchrum (a classic punch ingredient) and it had a nice fizz between the Pommeau Normandie (a type of eau de vie) and the cider. He also very carefully grated nutmeg on each glass.

auto

Auchentoshen – Triple Threat Punch

As with previous tastings, the crowd crowned their favorite which happened to also be my favorite. Robin Jackson from Oldfield’s Liquor Bar created the Triple Threat punch with Auchentoshan Three Wood Single Malt Scotch, Bonal Gentian Quina, ginger syrup, lemon, champagne, sparkling mineral water and persimmon.

Brian Summers, Lanae Lee, Yuval

Brian Summers (The Parish, Balvenie), Lanee Lee Neil, Yuval Soffer (Neat)

I spent a lot of time over at the Balvenie table as it is one of my favorite Scotches. Brian Summers, Brand Ambassador for Balvenie and bartender at The Parish, was conducting tastings. I asked him to start me out with what he thought I should try first. This tasting, I enjoyed the 12 Year Doublewood and then the Caribbean cask as well. Sharing his table was Monkey Shoulder. Bartender Yuval Soffer from Neat created a hot drink which stood out against the many cold punches this evening.  Monkey Shoulder Hot Holiday Punch (Monkey Shoulder Scotch, unfiltered apple juice, Snap, Gran Marnier, Holiday spices, gooseberries, orange zest, lemon zest, gingerbread bitters) was so good, I would have kept getting more but then remembered I had some other tables to check out.

Rebel Yell

Rebel Yell

I consider Rebel Yell an inexpensive mixing bourbon to keep on hand since I can find it at my local Trader Joe’s. For this tasting, they brought out their reserve and did a tasting. Their cocktail was a simple Rebel Yell, orange juice and grenadine.

Templeton Rye

Templeton Rye

I love Templeton Rye so I was excited they were at the tasting. They were doing a Templeton Milk Punch (Templeton Rye, Vanilla bean, Sarsaparilla root, milk, nutmeg, lemon). This punch was a bit bitter for me (and I like bitter!) but possibly because it was nearing the end of the tasting.  Knob Creek actually ran out of their punch so I couldn’t taste it. They even then ran out of bottles so they couldn’t do tastings anymore either.

Macallan

Macallan

Over at the Macallan and Highland Park table, I tried the Orcadian Autumn (Highland Park 12 year, apple cider, fresh lime juice, cinnamon syrup). You could also do individual tastings of the various expressions as well.

But probably the best single dram I tasted this night? Johnny Walker Blue. Boom.

Bartending on the Fly at Cole’s for Repeal Day

Cole's - now muddling with beer bottles

Cole’s – now muddling with beer bottles

A few weeks ago, on the night before Repeal Day, Cole’s hosted their annual Jimmy Barella bartending competition. It started at 2PM and I made it to Cole’s to watch the final heat with Edwin Gomez of Cole’s competing with Chris Day (formerly of Bar | Kitchen, Sotto).

For this round, they were not allowed any bar tools except for the glasses the cocktails and ice. They were given a MacGyver type kit that included string and random ingredients.

Remember those days in college when you used to stir your cocktails with chopsticks? This was more intense than that. I saw Edwin muddling mint with a beer bottle and Chris mixing his cocktail with a carafe he found at the bar and then straining with a ladle. Oh yeah, that meant everything was free poured as well.

Chris won with his 2-part cocktail which involved Templeton rye, Fernet-Branca and Chartreuse. Hey, sounds like my kind of party!

Fernet luge

Fernet-Branca luge

Part of the festivities included a Fernet-Branca double ice luge, Templeton punch and a free shot of Fernet-Branca at midnight. The double luge was set on a table with two chairs so you could do a shot with a friend. As if you really needed moral support to do a luge.

On a side note, after the competition, I got the Old Devil (Smith & Cross rum, Sailor Jerry rum, Appleton 12-Year-Old rum, Angostura bitters, Tiki Bitters, brown sugar cube), a drink by one of the Minty’s Hot Bartenders Danny Cymbal. It just went off the specials list but I’m sure you can still request the potent triple rum brew.

Hollywood’s The Spare Room Pops Up in New Orleans for Tales of the Cocktail

Standard

The Spare Room’s Beverage Director Naomi Schimek

One of my favorite bars in Los Angeles is the Spare Room. Naturally, I was very excited when they did a pop-up bar in New Orleans for Tales of the Cocktail. The Spare Room in Hollywood has bowling- just two lanes. They took over New Orleans Rock and Bowl and invited bartenders to compete. In bowling, that is. Punches were provided as well as an array of food.

Beverage Director Naomi Schimek is always the most hospitable host. She welcomed all and I wasn’t concerned at all about her punches. Sometimes I’m a bit wary of pre-batched drinks but the ones I tried were perfect. I really liked the Louisiana Porch Swing (Absolut, Pernod absinthe, peach melba tea, lemon, mint, Peychaud’s bitters).

Of course by the end of the night, the drinks may have turned into shots.

But that only helped get people on the dance floor.

Jeremy Lake Wins the Galliano Golden Vespa

Standard

Jeremy Lake Enjoying his new Galliano Golden Vespa

Jeremy Lake, the bar manager for both Chef John Sedlar’s restaurants, Playa and Rivera, recently won the Galliano Golden Vespa Los Angeles regional competition with his cocktail, the Italian Motorcade. One of his prizes is the Galliano Vespa, a golden one of course.

The finalists were selected from recipes they had submitted online. The LA regional saw bartenders come as far as Sacramento and also from San Diego. Judges including cocktail blogger Thirsty in LA selected Jeremy as the regional winner. There are also four other regional winners including New York, Boston, Chicago and San Francisco.

at Playa

The competition required the use of Galliano L’Autentico which previously was best known as an ingredient in a Harvey Wallbanger (Galliano, vodka, orange juice).

Jeremy’s Italian Motorcade features Galliano, Creme de Cacao, Yellow Chartreuse, coffee liqueur and cream. First he rinses the cocktail glass with absinthe and then adds the stirred cocktail. To finish, he tops the drink with thick cream poured carefully over a bar spoon. Initially the drink would seem like a dessert drink with the rich cream and chocolate/coffee flavors but the kick of absinthe and chartreuse really comes through. And delightedly, the Galliano comes through and lingers at the finish. It really was a special drink.

Jeremy Lake presenting the Italian Motorcade

Italian Motorcade

And it’s gorgeous. The creamy layer atop the glowing green cocktail was very well received by the bar patrons.

Suffering in Silence

While I was there, I heard Jeremy had come up with another Galliano cocktail he named Suffering in Silence. Of course I had to try it. Besides the Galliano, there was also anejo tequila, high-proof bourbon (he used St. George’s Breaking and Entering bourbon), lemon and shook with dry ice. After double-straining, the cocktail is garnished with crystallized mint Jeremy made, pickle chips and rimmed with a cocoa and sea salt mixture. When asked why he chose to garnish with chocolate and pickles (was he pregnant?), Jeremy replied the the cocoa inspiration comes from the chocolate notes in the anejo tequila and bourbon. And the pickles from the dill flavor from American white oak barrels the whiskey had been aged in.

This cocktail isn’t on the menu at Playa yet but maybe if you ask him nicely, Jeremy will make one for you.

Recap: First Annual Sake Competition in Malibu

Standard

Josh Curtis competing

I attended the First Annual Sake Competition in Malibu a couple of weekends ago. The contest was sponsored by the Umenoyado Brewery of Nara, Japan  and Banzai Beverage Corporation. The USBG approved event had over 300 submissions. The four finalists Josh Curtis, Christopher Barragan, Michael Blum and Nikki Martin were selected to serve their winning cocktails and compete for a cash prize of $1000.

trophy & sake

The party also launched the new Evoluzione sakes and introduced the crowd to Bunny sparkling sakes. Throughout the party and competition Bravo was filming a new show featuring Eater LA’s Kat Odell and Brenda Urban from Wagstaff Public Relations. You just might see the Minty in the background soon!

sake tasting

Inside the private beach house, we enjoyed lunch and a sake tasting. We also had freshly shucked oysters which went really well with the fizzy sakes.

Nikki Martin

I had the opportunity to try three of the four featured cocktails. Nikki Martin runs her own catering company now and explained her drink, the Liquid Carpaccio was inspired by some of her favorite Japanese foods. The Aragoshi yuzu sake was mixed with Hendrick’s gin, agave, her homemade ginger caviar and topped with a drizzle of grape seed oil. It was also rimmed with a mixture of seaweed, kosher salt and wasabi powder. This was definitely a savory cocktail.

Liquid Carpaccio

Nikki told me she used to work at ink with Devon Espinosa. I liked her cocktail and thought it was interesting she made her own caviar which I found out were made with agar agar instead of the liquid nitrogen bath technique I knew of.

Michael Blum

At UMAMIcatessen, I love a particular cocktail called the Red Sapphire. UMAMIcatessen bartender Michael Blum, under the tutelage of Adrian Biggs, has come up with his own version, the Spangled Sapphire.

Spangled Sapphire

With Aragoshi yuzu sake, Bombay Sapphire gin, St. Vincent’s orgeat, Gindo’s Spice of life, ginger beer and powdered mint Michael made himself, this was my favorite drink of the day.

Christopher Barragan

I also got to try Christopher Barragan’s Happo Biraki cocktail. Christopher works at the Fleming’s in Woodland Hills.

Happo Biraki

Happo Biraki which translates as the way of the samurai warrior was a wonderfully refreshing cocktail. Made with Evoluzione junmai daiginjo sake, Persian cucumber, Meyer lemon and agave, Chris also garnished it with a slice of cucumber with one end dipped in espelette. You could choose to dip the pepper into the cocktail if you liked a spicy kick. As he said, he liked to give people options.

The competition began with Heather Storm as the MC. First up was Josh Curtis. All bartenders were going to be judged with 5 criteria including presentation, aroma, taste, originality and best use of sake. Josh went with a relatively simple drink with Evoluzione jumai daiginjo sake, smashed cucumber, simple syrup, lime and garnished with cucumber. It sounded like Chris Barragan’s cockail, the Happo Biraki. Judges Mr. Yoshida from the Umenoyado Brewery, sake expert Eric Swanson, Eater LA editor Kat Odell and Black Lab‘s Joel Black later deemed this cocktail too simple and unoriginal.

Mike explained that although he’s been bartending for 9 years, it’s only been in the last couple of years he’s been into the craft of cocktails. He came up with a plum sake, Stoli elit vodka, lime, orange juice and kaffir lime syrup cocktail. He also made his own star-shaped plum lollypop garnishes. He called his drink the Prince & and the Popper. The judges really liked the lollypops.

Nikki went to work on her competition cocktail. She also chose to work with the plum sake and made a drink with it, Pisco Porton, egg whites, simple syrup and lemon. It was very much like a pisco sour. It was rimmed with finely chopped shiso. Later the judges agreed Nikki had the fiercest shake. Mr. Yoshida was impressed.

Chris who has been working as a bartender, sommelier and beer cicerone for 19 years made a drink with the Aragoshi yuzu sake, Hendrick’s gin, rose water, thyme. It had a lovely garnish of a lemon twist with thyme. Chris later won the competition and the $1000 but he was unable to accept the giant check at the time as he had to leave for work!

It was a beautiful day in Malibu and I can’t wait to see what they come up with for next year’s competition.
