Blue Chair Bay Rums – coconut spiced, white, coconut

 

Recently I experimented with Blue Chair Bay Rum at home. I was first introduced to them at WSWA, the Wine and Spirits Wholesales of America conference earlier this year in Orlando. There are three in the collection including white, coconut and coconut spiced. They are blended rums from the Caribbean and inspired by Country singer Kenny Chesney’s love of the island lifestyle.

Blue Chair Bay is currently running a contest and two winners will win a beach vacation. Each winner will be allowed to bring 2 friends with them to a beach vacation of their choice. Plus there are daily prizes. The grand prize winners will be announced on Black Friday, November 29th.

I opened the white rum and first made a classic daiquiri.

  • 2 oz. Blue Chair Bay white rum
  • 1 oz. lime
  • 1 oz. simple syrup

Combine ingredients in a shaker and shake approximately 40 seconds. Strain into a cocktail glass. Garnish with a lime wheel.

Pom

Pom Pom by the Minty

 

I came up with what I’m calling the Pom Pom using Blue Chair Bay white rum.

  • 2 oz. Blue Chair Bay white rum
  • 1 oz. Becherovka
  • 1 oz lime juice
  • Arizona Bitters Company Orange Sunshine Bitters
  • San Pellegrino Pompelmo

Shake the first three ingredients for approximately 40 seconds. Strain and pour into glass. Top with San Pellegrino Pompelmo and add a couple dashes of orange bitters. I like Arizona Bitters Company’s Orange Sunshine bitters. If you want it more sweet, you can add .25 oz of simple syrup but I found it to be just perfect. You can also pour it onto fresh ice as well but I liked it without the ice.
